It may be too late for this but what if:
1. You could roll back removing the classes
2. Add an Unclassed option.
and
3. Remove starting towns
4. Tweak the classes so that they give a bonus similar to the starting towns. Wizards could choose an area of magic to get a +25 bonus. Rogues could choose between stealing, hiding, or something. Warriror classes would choose between diffent combinations of weapons, shields, dodging, healing, protection.
The unclassed option could look similar to what we have now. You could choose between any skills but you would not get a specialization bonus.
I just really like the idea of committing to a specialty and recieving a bonus for it.

My oppinion
1: No dont remove them, change them up make a selected class giving you benefits in certain skills and bonuses, +25 in 2-3 skills, +10-15 in a stat. and so on.
2: no..
3: Starting towns do what i think should be done in selecting a class, Could insted add experts in game, who you can do quests for, kinda like expanding your blacksmith/carpentry and so on. Maybe you could do quests for a sword expert and that way you will get +25 in swords as a bonus, beeing able to only be expert at one thing at a time, able to change but that way by going to a new expert and doing his quest but you will lose ur current expert skill.
4: Yes a mix of what you said and i said on 1:
Committing to something is the only reason for making new characters, to try new things out, if everyone is the same all the time, the only different is what skills you pick. But if committing a character to beeing better at something else will make everyone very different.
